We've chosen to raise our Highland steers using a grass-fed and grass-finished approach. Since Highland cattle have thick coats for weather protection, they don't rely on layers of fat over muscle to stay warm. Highland beef tends to be more lean, and has better internal marbling than other beef breeds. We don't use corn or grain for their feed, and we love to watch our animals roam through our pastures.
